What Happens When Coffee Is Roasted?
Roasting is where the flavor of coffee really begins to develop.
Green coffee beans contain hundreds of chemical compounds, but they don't taste or smell like the coffee we know. During roasting, heat triggers a series of complex chemical reactions—including the Maillard reaction and caramelization—that create many of the compounds responsible for coffee's aroma, flavor, color and body.
As the beans roast, they develop the characteristics we associate with coffee: chocolate, caramel, nuts, fruit, spice, toast and countless other aromas and flavors.
Roasting also creates gases inside the bean, particularly carbon dioxide (CO₂). This is why freshly roasted coffee releases gas after roasting, a process known as degassing.
